LITERATUR REVIEW: POTENSI ROSELLA (HIBISCUS SABDARIFFA L) SEBAGAI  BAHAN FUNGSIONAL DALAM EDIBLE FILM BERBASIS ALAMI

Abstract

The development of edible films based on natural ingredients has become the main focus in creating environmentally friendly and functional food packaging. This research aims to evaluate the physical, mechanical and bioactive properties of starch- based edible film with the addition of rosella flower extract (Hibiscus sabdariffa L.). Rosella extract was obtained through a maceration method using ethanol-water solvent, then mixed into a film matrix based on durian seed starch and starch-glycerol. Tests include thickness, pH, water absorption, tensile strength, elongation, water vapor permeability, antioxidant activity using the DPPH assay method, as well as bioindicator functions based on changes in pH. The results showed that edible film based on durian seed starch had high water absorption (80%), slightly acidic pH (5.535–6.317), and high flexibility (180.2%), but low tensile strength (0.000363 N/mm² ). In contrast, starch-glycerol based edible films have higher tensile strength (0.39–1.09 N), lower water vapor permeability (3.59–4.01 g/m²·hour), as well as good bioindicator functions through color changes based on pH. The anthocyanin content in rosella makes a significant contribution to the antioxidant activity and bioindicator function of edible film. This research shows the potential of rosella-based edible film as an alternative food packaging that is environmentally friendly, functional and smart. Potential applications include fresh food packaging and pH change-based food quality detection.
